Thyme & Rosemary Lemon Chicken

Today is a fun day on the blog! Not only am I sharing a delicious Thyme & Rosemary Lemon Chicken recipe, I’m also going to tell you about the Instagram giveaway I’m hosting that kicks off today. If you’re looking for an easy chicken recipe for dinner tonight, or tomorrow, or next week, or every day [sorry I got carried away], then you’ve surely found it.

Thyme & rosemary lemon chickenOn top of the chicken, I decided to throw some red potatoes in the mix to make this recipe a full meal. Don’t you love when you can just throw it all together and be done? It’s the best.

Thyme & Rosemary Lemon Chicken

An easy chicken dish that's sure to please: topped with thyme, rosemary and lemon.

Ingredients
  • 4-5 red potatoes cut into bite-sized pieces
  • 3 tablespoons of olive oil
  • 2 cloves of garlic, chopped
  • 2 lemons, 1 juiced and 1 sliced for garnish
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon dried thyme
  • Salt & pepper to taste
  • 1.5 lbs. chicken breasts cut into bite-sized pieces
  • Fresh rosemary for garnish (optional)
Instructions
  1. Microwave potatoes in a glass bowl for 10 minutes (when done, remove and let cool for 3 minutes)
  2. Heat 1 tablespoon of olive oil in a large skillet over medium high heat
  3. Add garlic and cook until fragrant (1 min)
  4. In a separate bowl whisk together the lemon juice, 2 tablespoons oil, 1 tablespoon chopped fresh rosemary, 1 tablespoon dried thyme and salt & pepper to taste
  5. Add potatoes and chicken to skillet
  6. Pour lemon sauce mixture all over, stir to coat
  7. Cook until chicken and potatoes are slightly browned and cooked through (13-16 minutes)
  8. Top with sliced lemons and rosemary sprigs
  9. Dig in!
