Peanut Butter and Jelly Bacon Sliders

We’ve come to one of my favorite times of the month–the Monthly Ingredient Challenge! Every month, a group of extremely talented bloggers and I all develop a recipe using one common ingredient. I was so excited when the ingredient for this month was announced–peanut butter–because it’s one of my true food weaknesses. I love everything about peanut butter: Growing up, I used to eat an apple with peanut butter every single night before I went to bed. Every single night. But when it came to this challenge, I wanted to do something different and unique. I kept thinking of mediocre ideas and things that have been done tons of times before. That’s when I consulted my trusty friend (and unofficial recipe developer), Tracy. Her first suggestion was PB&J bacon sliders. I was sold. PB&J Bacon SlidersTracy is usually the friend I consult for recipe ideas when I’m in a rut. So much so that her new title is inspirator, which is a combination of inspiration and conspirator (credit, Tracy). She’s a lover of all things food, and I met her in New Orleans which is basically the food capital of America. In short, she’s pretty awesome. Anyways, back to the recipe. I knew these were going to be good, but I didn’t know just how good they were going to be. These blew me away. For real. Every bite just got better and better. The best part about these is that they’re insanely easy to make, but they pack a big flavor punch. All you need is ground beef, bacon, peanut butter, jelly, and slider buns. That’s it! Easy on your wallet and great on your taste buds. Start by heating your grill to medium heat. Season 1 pound of ground beef with salt and pepper to taste (optional). Form the beef into slider-sized patties (1 lb should make 6-7 patties). Grill patties to your liking (2-4 mins. each side). You’ll need 1 strip of bacon per two sliders, so if you’re making 6 sliders, grill 3 pieces of bacon. The bacon will cook much quicker than your burgers did–each strip needs 1-2 minutes per side. I also set my buns on the grill for 15 seconds each, but this step is optional (though recommended). Now, line up your buns and place your burgers on them. PB&J Bacon SlidersNext, add half a strip of bacon to each slider. PB&J Bacon SlidersSpread peanut butter and jelly (I used blackberry jelly and it was perfect) on the top part of the bun. PB&J Bacon SlidersPlace the top of the bun onto the bottom part and secure with a toothpick. PB&J Bacon SlidersPB&J Bacon Sliders
