Melon and Prosciutto Stacks with Arugula and Honey

I love the combination of melon and prosciutto, but when I wrote this post for My Cooking Spot, I wanted to take it a step further. By adding arugula and honey to these bites, the flavor was out of this world. For real. I actually ate these for breakfast, but they would make for an incredible snack or appetizer.
