Coconut Almond Butter with a Honey Drizzle

I’ve been absolutely loving experimenting with breakfasts lately. Usually I leave my experimentation to dinners and desserts and eat a boring breakfast, but not this year. I’ve declared this year the year of the breakfasts! And while experimenting, I came up with this incredibly delicious breakfast: Coconut Almond Butter on Graham Crackers with a Honey Drizzle.

Coconut Almond ButterWhen I took my first bite of graham cracker I knew I was in love. Seriously. There are so many delicious flavors combined in one bite: the coconut, the almond, the graham cracker and the honey. All of the flavors complement each other so ridiculously well–in a way that I literally can’t describe with words. And it’s so easy to make that you just need to try it for yourself to experience the level of excitement that I’m at right now.

Coconut Almond ButterThis has seriously become my go-to snack. I make a big bowl of it, and then munch on it the rest of the week. That’s the beauty of it–you don’t have to just eat it for breakfast, it makes a perfect snack for when you’re hungry but don’t want to overindulge. It’s healthy and filling! My favorite kind of snack.

So, what you’re going to do is start out with 1 cup of coconut flakes and 1 cup of almonds. (Pictured is only 1/2 cup of almonds, but make sure to add a full cup).

Coconut Almond ButterAdd the coconut and almonds to a blender or food processor, along with 2 tablespoon of coconut milk (or regular milk if you prefer) and 2 tablespoons of olive oil.

Coconut Almond ButterBlend until you reach the consistency that you want. I didn’t want mine to be completely creamy, I still wanted a bit of almond crunch. So, I blended mine for about 4-5 minutes, stopping to push down the edges about every minute or so. If you want more of a buttery consistency, then blend for 8-10 minutes, pushing down the sides about every minute.

Coconut Almond ButterTop the graham crackers with about 1 tablespoon of the mixture and drizzle with honey. Prepare to have your taste buds do a lot dance.

  • 1 cup coconut flakes
  • 1 cup whole almonds
  • 2 tablespoons coconut milk (can be substituted for regular milk)
  • 2 tablespoons olive oil
  • 10 graham crackers
  • Honey
  1. Add coconut, almonds, coconut milk and olive oil to a blender or food processor.
  2. Blend for 4-5 minutes if you want a chunky mixture, 8-10 minutes if you want a smooth mixture--push down the sides of the mixture about every minute.
  3. Add 1 tablespoon of coconut almond butter to a graham cracker.
  4. Drizzle with honey.
  5. Continue with remaining butter and crackers.
  6. Dig in!
