Chocolate Banana Streusel Muffins

I’m going to talk to you today about what I thought was a fault of mine, but now I’ve come to realize it’s a strength. Often, when I’m in the grocery store, I think it’s a great idea to buy bananas. “These will be a great grab-and-go breakfast,” I tell myself. I pick up a bunch of bananas, and then go on my way. Days go by, and those beautiful yellows bananas begin to turn brown. No one has eaten any. Now, I thought that constantly buying bananas and being hopeful about the possibility of them being eaten was a fault of mine, however, today I come to you with the realization that it’s a strength. Due to browning bananas, I’ve created two of my absolute favorite recipes on this blog: Banana Bread and Chocolate Muffins and the incredibly scrumptious Chocolate Banana Streusel Muffins I’m sharing with you today.

Chocolate Banana Streusel MuffinsThese muffins are ridiculously moist and packed with a cinnamon and nutmeg flavor that complements the banana in the best way. But what really helps these babies shine is the crumbly brown sugar streusel topping and the chocolate drizzle.

But in the meantime, these muffins are more than enough to satisfy my sweets craving.

Chocolate Banana Streusel Muffins

Moist banana muffins topped with a crumbly, brown sugar streusel topping and drizzled with chocolate.

Serves: 10
  • For muffins:
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ tsp salt
  • 3 ripe bananas, mashed (I used a potato masher)
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • ⅓ cup butter, melted
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • For Topping:
  • ⅓ cup packed light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter
  • ¼ cup chocolate melts
  1. Preheat oven to 375
  2. Line 10 muffin cups with cupcake wrappers/muffin liners
  3. In a medium bowl, combine flour, baking powder, baking soda, granulated sugar, salt, cinnamon and nutmeg
  4. In a standing mixer, combine bananas, granulated sugar, brown sugar, egg, vanilla and melted butter. Mix on medium setting for one minute
  5. Turn the mixer down to a low setting and slowly add in the flour mixture. Mix until all of the flour is moistened
  6. Divide the mixture evenly among the muffin wrappers (will expand when baking)
  7. In a small bowl, combine the brown sugar and flour for the topping
  8. Cut in the butter
  9. Sprinkle the brown sugar topping over each muffin (I sprinkled heavily since this is my favorite part!)
  10. Bake for 18-20 minutes (mine was perfect at 19), or until you can insert a toothpick and pull it out dry
  11. Pull the muffins out and let cool on the counter
  12. Place your chocolate melts in a microwaveable bowl
  13. Microwave on the defrost setting for 1 minute (or longer if you need longer, just be sure not to burn the chocolate)
  14. Stir the chocolate and drizzle on the muffins with a fork
  15. Let cool and serve
