I’ve got to tell you guys, I usually always say that at the start of the year I’m going to eat healthy, and then by the end first week I’m back to stuffing my face with pasta. Not this year. This year I’m three weeks in and eating healthier than ever. Stephen and I committed to this whole weight loss thing together, so it really helps having someone else going through the journey with you. He gets up before work and goes to the gym (which is way, way too early for me), and I usually take a dance circuit or barre class mid-morning. It’s been great.
But the key to staying healthy, and the culprit to my usual downfall, is snacking. I’m a snacking fanatic, so coming up with healthy snacks that I actually crave is huge. Enter: celery with peanut butter, sunflower seeds, and honey.
Recently, I made the switch to working from home full-time. This has been absolutely wonderful and I’m thrilled, but it also means I have endless access to my pantry. So it’s extra important to dream up snacks that are healthy and that I actually want to eat. Let me tell you, these celery sticks are insaaaanely good. Like, tears of sadness when you’re done eating them. Ok, maybe that’s a bit dramatic. Or maybe not.
I’ve always been a fan of celery and peanut butter, but adding sunflowers and honey seriously sends the flavor up ten notches. These have officially become my new favorite mid-day snack. They’re perfect to munch on and leave you feeling full for quite a long time, which is fantastic.
Now excuse me while I go whip up a plate of these.
- Celery Sticks
- Peanut Butter (I used crunchy, but creamy is fine too!)
- Sunflower Seeds
- Fill in the crevices of the celery with peanut butter.
- Sprinkle the sticks with sunflower seeds.
- Drizzle with honey.
