I’m constantly on the lookout for amazing breakfast recipes. I know having a delicious meal for breakfast, lunch, and dinner is important but I love putting an emphasis on breakfast because it sets the tone for your whole day. If you start the day with a great breakfast, chances are you’ll have a better day (this is my unscientific observation).
And what better way to start your day then with fresh, toast bread topped with crispy bacon, sliced avocado and shredded Parmesan?
When I first met my boyfriend’s daughter, Aurora, about three years ago, she didn’t even know what an avocado was. But by living with me, and being exposed to my avocado obsession, I’ve got her hooked. I think she may even love avocados more than I do (er, is that possible?) She also doesn’t like eggs or bacon, so when I made this for her (substituting turkey bacon for real bacon) she was in Heaven! I won all the best chef awards that morning. She’s asked me to make it every weekend morning since.
And what’s great is that you can throw this together really quickly–it takes about 7 mins. all together (depending on how long you cook your bacon for), so you can get to your weekend activities sooner!
- 2 strips of bacon
- 1 Haas avocado
- 2 Slices of bread (I used sliced Italian)
- Parmesan cheese
- Cook bacon in a skillet until crispy, set aside on paper towel
- Toast your bread to your liking
- Slice your avocado
- Top your bread with one slice of bacon and half of the avocado slices
- Repeat for second piece of bread
- Sprinkle Parmesan on both pieces
- Dig in!
